olive oil

red onions, finely sliced
- 1 tsp.
caster sugar

celery sticks, finely sliced
- 2
eating apples, cored and cut into 1cm pieces
- 1/2 Tbsp.
dried sage
- 200 g
white or brown bread (stale is ideal), cut into roughly 1.5-2cm pieces
- 300 ml
strong vegetable stock
Large handful parsley, roughly chopped
- 75 g
mature Cheddar, coarsely grated
- Step 1Heat 1/2tbsp oil in a large frying pan over low heat. Add the onions and a large pinch of salt and cook for 15min, stirring occasionally, until completely softened. Turn up the heat to medium, add the sugar and cook for 5min, stirring frequently, until caramelised. Empty into a medium bowl.
- Step 2Preheat oven to 190°C (170°C fan) mark 5. Add the remaining 1/2tbsp oil to the pan and lower the heat slightly. Cook the celery and apples for 5min, until slightly softened. Add to the onion bowl, and mix in the sage, bread pieces, stock, plenty of seasoning and most of parsley and cheese. Empty into an ovenproof serving dish.
- Step 3Sprinkle over the remaining cheese and cook in the oven for 30min, or until golden and piping hot. Sprinkle over the remaining parsley and serve.
