Banana bread gets a chocolatey upgrade in these delicious breakfast muffins. They keep really well, thanks to the banana keeping the sponge moist, and make a great lunchbox snack, too.

Ingredients
For the topping
25g
butter
1Tbsp.
runny honey
40g
rolled oats
40g
skin-on almonds, chopped
For the muffins

medium, very ripe, bananas (300g peeled weight)
200g
light brown soft sugar
125ml
sunflower oil
2
medium eggs
2Tbsp.
almond butter
2tsp.
vanilla extract
200g
plain flour
1tsp.
bicarbonate of soda
50g
dark chocolate chips
Directions
Step 1Preheat oven to 180°C (160°C fan) mark 4 and line a 12-hole muffin tin with paper cases.
Step 2Make the topping. In a small pan over low heat, melt the butter and honey. Remove pan from heat and stir in the oats, almonds and a pinch of salt. Set aside.
Step 3For the muffins, in a medium bowl mash the bananas thoroughly then mix in the sugar, oil, eggs, almond butter and vanilla, until combined. Add the flour, bicarbonate of soda and chocolate chips and stir through.
Step 4Divide batter evenly between the cases (they will be fairly full) then spoon over the topping. Bake for 25-30min, until well risen and browned on top. Remove to a wire rack to cool slightly (or completely) before serving.
