Ingredients
300g
spaghetti
60g
Parmesan, finely grated
60g
Pecorino, finely grated
50g
butter
1/2Tbsp.
freshly ground black pepper (see GH tip)
200g
white or brown fresh crab meat
Small handful parsley, leaves picked and roughly chopped
Directions
Step 1Bring a large pan of salted water to boil and cook pasta according to pack instructions. A couple of minutes into cooking, carefully remove 300ml of the starchy cooking water.
Step 2In a bowl whisk the cheeses with the reserved pasta water, until smooth. Melt butter in a large frying pan over medium heat, add pepper and crab and fry for 5min.
Step 3Drain pasta and add to the frying pan along with the cheese sauce. Increase heat to high and toss together until sauce coats the pasta, this may take a couple of min. Stir through the parsley, divide between warm bowls and serve.

Freshly grind your pepper coarsely for this, or roughly crush with a pestle and mortar; it’s a key flavour in the dish.
