Ingredients
225g
unsalted butter, softened
275g
light brown soft sugar
1Tbsp.
golden syrup
2
large eggs, lightly beaten
400g
plain flour
1tsp.
bicarbonate of soda
25g
cocoa powder
200g
mint Aero chocolate, roughly chopped
Directions
Step 1Preheat oven to 200°C (180°C fan) mark 6. Line 3 baking sheets with baking parchment. In a large bowl with a handheld electric whisk, beat together the butter, sugar and golden syrup until pale and fluffy.
Step 2Add the egg, a little at a time, beating well after each addition. Sift in the flour, bicarbonate of soda, cocoa and 1/4tsp salt and beat until combined. Fold in the chopped chocolate with a large spoon.
Step 3Divide and roll dough into 25 balls and space evenly apart on the prepared baking sheets.
Step 4Bake for 12min until edges are just firming but centres are still soft (they will crisp on cooling). Cool for 5min on the sheets, then transfer to a wire rack to cool completely before serving.
To store:
Store in an airtight container at room temperature for up to 5 days.

Complete recipe to end of step 3. Freeze for 1hr until firm then transfer to a freezer-safe container and freeze for up to 3 months. Bake from frozen.
