Both the burgers and flatbreads can be cooked in an air fryer if you prefer! Use lean lamb mince here and there’s no egg or breadcrumbs needed to bind. Chopped fresh herbs work well in the burger mixture, too.
These fluffy homemade flatbreads are filled with a juicy lamb burger and refreshing tzatziki and are equally delicious cooked in a pan or even more speedily in an air fryer (yes, the flatbreads as well as the burgers!. This Greek-inspired midweek meal is perfect for a small household of 2 people.
TO COOK IN AN AIR FRYER Prepare flatbread dough and lamb burgers to end of step 3. Cover and chill burgers while you cook the flatbreads. Preheat air fryer to 180°C, according to manufacturer’s instructions. Cook flatbreads, one at a time, for 5-6min, until golden and puffed. Keep warm wrapped in a tea towel while you cook the second flatbread and then the burgers. Once both flatbreads are cooked, add the lamb burgers to the air fryer and cook for 8-10min, until cooked through. Complete recipe to serve.

Ingredients
For the flatbreads
100ml
milk
25g
butter
150g
plain flour, plus extra to dust
For the burgers
200g
lean lamb mince

red onion, finely chopped

garlic clove, crushed
3/4tsp.
dried oregano
1/2tsp.
paprika
For the tzatziki

Greek yogurt, full or low fat

cm piece cucumber, finely chopped

-2tsp mint sauce, or few mint leaves, finely chopped

Directions
Step 1Start by making the flatbreads. Heat milk and butter in a small pan, just until butter melts. Cool for 5min. In a medium bowl, mix flour, ¼tsp fine salt and milk mixture to make a dough.
Step 2Lightly flour a work surface and knead dough for 1min, then cover with the upturned bowl and leave to rest while you make the burgers.
Step 3Preheat oven to 190°C (170°C fan) mark 5 (or to cook in an air fryer, see recipe intro). Mix all the burger ingredients with some seasoning. Shape into 2 wide, flattened patties (they will shrink on cooking).
Step 4Heat a medium-large frying pan (it will be used again later for the flatbreads) over medium heat. Fry burgers (without oil) for 3min per side, until browned. Transfer to a small baking tray and continue cooking in oven for 12-15min, until cooked through.
Step 5Meanwhile wipe out the frying pan. Lightly flour a work surface and split the dough in two. Roll out each portion to a rough 20.5-23cm circle. Heat frying pan over medium heat and fry flatbreads one at a time for 2-3min per side until speckled golden. Cool wrapped in a clean tea towel.
Step 6Mix the tzatziki ingredients with some seasoning. Serve burgers, tomato, onion and salad, if using, dolloped with tzatziki and folded in the flatbreads.
