If you can’t find corn in husks, wrap in foil instead. Remove foil and cook directly on the barbecue or griddle for the final 5min of cooking.

corn cobs, in their husks
2Tbsp.
mayonnaise
3Tbsp.
sweet chilli sauce
2tsp.
chipotle chilli flakes
3Tbsp.
chopped fresh chives
Directions
Step 1Soak corn, in its husks, in cold water for 30min. Carefully peel back husks, leaving them attached at the stalk end. Brush corn all over with the mayonnaise and sweet chilli sauce. Sprinkle over the chipotle flakes, half the chives and a little salt.
Step 2Fold the husks back over the corn, twisting ends to help them stay closed.
Step 3Barbecue or griddle over high heat for 20-30min, turning regularly. Peel off husks and sprinkle over remaining chives. Serve.
