Small handful coriander stalks, chopped
- 2
garlic cloves, chopped
- 1/2 tsp.
white or black peppercorns
- 2 tsp.
fish sauce
- 2 tsp.
oyster sauce
- 2 tsp.
soy sauce
- 1 tsp.
palm sugar (see GH tip)

pork shoulder steaks, about 350g
- Step 1In a pestle and mortar, pound the coriander stalks, garlic and peppercorns until paste-like. Mix in the fish, oyster and soy sauces and the palm sugar. Scrape into a medium non-metallic bowl and set aside.
- Step 2Cut the pork shoulder across the grain into strips, roughly 5mm thick. Put into the marinade bowl, turn to coat, cover and chill for 1hr, or up to 24hr.
- Step 3About 15min before cooking, cover the skewers with cold water and leave to soak.
- Step 4Thread the pork on to the skewers, packing each strip tightly down in an S pattern.
- Step 5Barbecue over medium heat, turning occasionally, for 15-20min until cooked through and tender. Serve warm, with rice.
GH Tip Palm sugar has an amazing caramel popcorn flavour but you can use light muscovado sugar instead.
No BBQ? No problem!
Heat a griddle pan over medium heat and cook skewers for 15-20min, turning occasionally. Add a spoonful of water to pan every 5min or so, to help with the cooking.
