Ingredients
1
medium egg white
1/4tsp.
cayenne pepper
1/2tsp.
mixed spice
400g
mixed unsalted nuts, we used cashews, almonds, pistachios, pecans and walnuts
25g
sunflower seeds
1Tbsp.
sesame seeds
Directions
Step 1Preheat oven to 180°C (160°C fan) mark 4 and line a baking tray with baking parchment. In a medium bowl, mix egg white, spices, 1/2tsp fine salt and some freshly ground black pepper.
Step 2Stir in the nuts and seeds, making sure everything is coated. Scape on to the lined baking tray and spread to an even thickness.
Step 3Cook for about 15min, or until golden. Leave to cool completely before serving.
Make up to 1 week ahead. Once cool, store in a sealed jar or airtight container.
If you like heat, use hot chilli powder instead of the cayenne pepper.
