1. Heat butter and oil in a large pan. Add onions, season with salt and stir. Turn heat to low, cover pan and leave onions to cook gently for about 15-20min, checking and stirring occasionally to prevent sticking.
2. Once onions are very soft and translucent, turn up heat and sprinkle with sugar. Stir and allow onions to caramelise for another 5min or so, until lightly browned.

3. Turn heat to low, stir in flour and cook for a couple of min until flour is combined. Pour in red wine and stir in to make a paste.
4. Add stock and stir. Turn up heat and simmer for about 3-5min until thickened. Check seasoning and serve.
