Ingredients
175g
strong white flour
125g
plain flour
2tsp.
caster sugar
1tsp.
fast-action dried yeast
1tsp.
baking powder
Oil, to grease

Directions
Step 1In a large bowl mix the flours, sugar, yeast, baking powder and 1/2tsp fine salt to combine. Whisk in 400ml just-warm water to make a smooth batter. Cover and set aside for 30min, or until the there are lots of little bubbles on the surface.
Step 2When the batter is ready, heavily grease 2-3 x 8.5cm crumpet/chef’s rings (see GH Tip), and place in a large, greased non-stick frying pan. Preheat over high heat.
Step 3When the pan is hot, turn down heat to medium and spoon batter into the rings, so they are about 1/2 full. Cook for 7-8min, or until the crumpets feel fairly set on top (a little damp patch in the centre is fine). Carefully remove the rings (using tongs is easiest) and flip the crumpets. Cook for 1min more, then lift on to a wire rack and cover with foil to keep warm.
Step 4Repeat cooking with remaining batter, re-greasing the pan and rings as needed. Serve warm from the pan with smoked salmon and scrambled eggs, if you like.
To store
Make up to 2 days ahead and store in an airtight container at room temperature. To serve, reheat in a toaster or under the grill.
GH Tip
If you don’t have crumpet/chef’s rings, you can use an 8.5cm round metal biscuit cutter. Just make sure that it sits flat inside the pan, to avoid any leakage.
