Ingredients
250g
cashew nuts
400g
caster sugar
2Tbsp.
golden syrup
100g
butter, chopped
1Tbsp.
mixed spice
1/2tsp.
cayenne pepper
2tsp.
flaked sea salt

Directions
Step 1Preheat oven to 160°C (140°C fan) mark 3. Spread cashews on a baking tray and cook in oven for 10min, until toasty. Set aside.
Step 2Meanwhile, line a second baking tray with baking parchment. Mix sugar, golden syrup, butter, spices, salt and 150ml water in a large, deep frying pan. Stir over low heat, until sugar dissolves. Turn up heat to medium-high and bubble until mixtures reaches 155°C on a sugar thermometer, about 15min, swirling the pan occasionally rather than stirring.
Step 3As soon as mixture reaches 155°C, remove from heat, sprinkle over the cashews and quickly stir to coat. Pour on to the lined tray (you can spread a little, but too much movement will cause the brittle to go cloudy). Leave to cool and set before breaking into shards.
