Ingredients
200g
dark chocolate (70% cocoa solids), finely chopped
3Tbsp.
extra virgin olive oil

medium eggs*, separated
50g
caster sugar
Directions
Step 1Melt chocolate and oil in a heatproof bowl set over a pan of barely simmering water (make sure the base of the bowl doesn’t touch the water). When melted, remove bowl from pan and set aside to cool completely.
Step 2In a medium bowl, using a handheld electric whisk, beat the egg yolks and sugar until light and fluffy, about 5min. Pour in the cooled chocolate mixture and gently mix to combine.
Step 3In a separate bowl, using clean beaters, whisk the egg whites to stiff peaks. Gently fold into the chocolate mixture using a large metal spoon.
Step 4Divide between 6 small glasses and chill for 1hr, until set. Serve with a little flaked sea salt sprinkled over, if you like.
GH TIPS: Make up to 24hr ahead; chill. The mousse will get firmer the longer it chills. Bring to room temperature before serving if you prefer a softer texture.
