Ingredients
1Tbsp.
vegetable oil
4
skinless chicken breasts
1
medium onion, finely sliced
1/2Tbsp.
plain flour
150ml
cider
150ml
double cream
2Tbsp.
wholegrain mustard
small handful fresh parsley, chopped
Directions
Step 1
Heat the oil in a large pan over high heat and fry the chicken breasts for 5min on each side until golden. Lift the chicken out of the pan and set aside. Add the onion to the pan and fry for 8min until softened.
Step 2
Stir in the flour until onions are coated, followed by the cider, cream and 200ml water. Return the chicken to the pan and simmer for 12-15min until cooked through (cut into one piece to make sure the meat is completely opaque).
Step 3
Stir in the mustard and parsley and season well. Serve with rice or crusty bread.
GH TIPS:
This is one of those recipes that is super versatile and can be served with rice, crusty bread or even cooked pappardelle pasta.
Why not experiment with flavours? We think adding in thinly sliced fennel or apple when frying the onions would make a lovely addition to this dish.
