Ingredients
500g
cherry tomatoes
2
garlic cloves, crushed
21/2Tbsp.
extra virgin olive oil
200g
feta
300g
penne pasta
25g
fresh basil, leaves picked and roughly chopped
Directions
Step 1Preheat oven to 220°C (200°C fan) mark 7. Toss the cherry tomatoes, garlic, 2tbsp olive oil and some seasoning in a medium, deep roasting tin (the tomatoes should just fit in a single layer). Place the feta in the centre and drizzle over the remaining 1⁄2tbsp oil. Cook for 35min.
Step 2When your sauce has 15min left, bring a large pan of salted water to the boil and cook the pasta according to pack instructions. Drain, reserving 150ml of the pasta cooking water.
Step 3Remove the roasting tin from the oven and stir in most of the basil, until the tomatoes and feta break up and you have a chunky sauce. Stir in the hot pasta and the reserved pasta water. Check seasoning, garnish with remaining basil and serve.
For added goodness, you could stir in a handful of baby spinach at step 3, until wilted.
