Store-bought waffle cookies make this pretty pink treat easy to make. Use freeze-dried strawberries to naturally tint the frosting!

Ingredients
- 1/2 cup
(1 stick) unsalted butter, at room temperature
- 1 1/2 cups
(6 oz) confectioners' sugar
- 2 Tbsp.
heavy cream, at room temperature
- 1 tsp.
pure vanilla extract
- 1/8 tsp.
kosher salt
- 3/4 cup
freeze-dried strawberries, finely crushed
Waffle cookies (we used Jules Destrooper)
Directions
- Step 1In large bowl, using electric mixer, beat butter and sugar 2 minutes. Add cream, vanilla, and salt and continue beating 1 minute. Fold in crushed strawberries. Sandwich between waffle cookies.
