Ingredients

  • 1 Tbsp. oil
  • 6 oz. cremini mushrooms, sliced
  • 1/4 tsp. salt
  • 1/2 cup salsa
  • 1/2 cup frozen corn
  • 4 8-inch flour tortillas
  • Cooking spray
  • 1 cup Shredded Monterey Jack cheese
  • sour cream

Directions

    1. Step 1In 10-inch skillet, heat 1 tablespoon oil on medium heat.
    2. Step 2Add cremini mushrooms and salt. Cook 4 minutes.
    3. Step 3Stir in salsa and frozen corn. Cook 2 minutes.
    4. Step 4Arrange flour tortillas on large cookie sheet sprayed with cooking spray. Divide mushrooms among tortillas; top with Monterey Jack cheese.
    5. Step 5Fold tortillas over to form half-moons; spray tops. Bake in 475 degrees F oven 6 minutes. Turn quesadillas over; bake another 6 minutes.
    6. Step 6Garnish with sour cream.
