Moss Cookies

These spooky cookies are easy to DIY

Spread misshapen moss cookies with green frosting and top with cookie and graham cracker crumbs to set an enchanted forest-floor scene.

Ingredients

  • 2 3/4 cups

    all-purpose flour

  • 1/2 tsp.

    baking powder

  • 1 cup

    (2 sticks) unsalted butter, at room temp

  • 3/4 cup

    granulated sugar

  • Moss- and leaf-green gel food coloring

  • 1

    large egg

  • 1 tsp.

    pure vanilla extract

  • 1/2 cup

    buttercream or premade frosting

  • 2

    graham crackers

Directions

    1. Step 1Heat oven to 350°F and line 2 large cookie sheets with reusable silicone baking mats or parchment paper.
    2. Step 2In large bowl, whisk together flour, baking powder and salt. In separate large bowl, using electric mixer, beat butter and sugar until light and fluffy, about 3 minutes. During last minute, add a few drops of gel food coloring to make dark green color. Beat in egg and then vanilla.
    3. Step 3Reduce mixer speed to low and gradually add flour mixture, mixing until just incorporated. Take unevenly sized pieces of dough and spread into thin, rough cookie shapes (about 1/8 inch to 1/4 inch thick) on prepared cookie sheets, using offset spatula or palm of hand.
    4. Step 4Bake, rotating positions of pans halfway through, until cookies feel sandy on top, 13 to 15 minutes. Let cool on wire rack.
    5. Step 5To decorate, tint frosting green. Finely crumble graham crackers and 2 moss cookies. Working 1 at a time, lightly spread underside of remaining cookies with thin layer of frosting and immediately sprinkle with cookie crumbs.

FOOD DYE 101: We love using gel paste food coloring instead of liquid for these ghoulishly green treats. The paste is thick and creates a vibrant, intense color without thinning out the frosting. Plus, a little goes a long way. If liquid food coloring is all you have on hand, use a few extra drops to create the desired moss-green hue.
