Ingredients
- 1 3/4 cups all-purpose flour 
- 1 1/2 tsp. baking powder 
- 1 tsp. baking soda 
- 1/2 tsp. salt 
- 2 cups low-fat buttermilk 
- 2 large eggs 
- 3 Tbsp. sugar 
- 3 Tbsp. vegetable oil 
- 1 Tbsp. vanilla extract 
Directions
- Step 1Preheat waffle maker. In a large bowl, whisk flour, baking powder, baking soda, and salt. In a medium bowl, whisk buttermilk, eggs, sugar, oil, and vanilla. Add buttermilk mixture to flour mixture. Stir until just combined (small lumps are OK).
- Step 2Spray waffle maker with nonstick cooking spray. Add 1/2 cup batter to waffle maker. Close the waffle maker and cook 2 to 5 minutes or until golden brown and crisp. Keep warm by placing directly on oven rack in a 225 degree F oven. Repeat with remaining batter. Cooked waffles may be cooled, wrapped tightly in plastic and frozen for up to 1 month. Reheat in toaster oven or a 350 degree F oven for 8 to 10 minutes (directly on oven rack) until hot and crisp.
