Ingredients

  • 1 cup

    all-purpose flour

  • 1/4 cup

    unsweetened cocoa powder

  • 3/4 tsp.

    baking soda

  • 1/4 tsp.

    baking powder

  • 1/4 tsp.

    kosher salt

  • 1/2 cup

    packed light brown sugar

  • 4 Tbsp.

    unsalted butter, at room temperature

  • 1

    large egg

  • 1/2 cup

    milk

  • 2 cups

    buttercream frosting

  • 1/2 cup

    M&M’s Minis

Directions

    1. Step 1Heat oven to 375°F. Line baking sheets with parchment paper. In medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
    2. Step 2In large bowl, using electric mixer, beat brown sugar and butter until light and fluffy, about 3 minutes. Beat in egg. Alternately add flour mixture and milk, mixing just until incorporated. 
    3. Step 3Drop level tablespoonfuls of batter onto prepared baking sheets, spacing 2 inches apart. Bake until tops are set and spring back when lightly pressed, 6 to 8 minutes. Let cool on baking sheets 5 minutes, then transfer to wire rack and let cool completely. 
    4. Step 4Using pastry bag or resealable bag, pipe thick rope of frosting around outer rims of flat sides of 6 whoopie pie halves. Chill until firm, about 15 minutes. Add 1 Tbsp M&M’s Minis to middle of each, then sandwich with remaining halves.
