Ingredients

  • 1/2

    small green cabbage (about 11/4 lbs)

  • 4 Tbsp.

    olive oil, divided

  • 2 Tbsp.

    fresh lime juice

  • 1 Tbsp.

    rice vinegar

  • 1 tsp.

    brown sugar

  • 1/2 tsp.

    red pepper flakes

  • Kosher salt

  • 1/2

    Napa cabbage (about 11/4 lbs), cored and cut lengthwise, then into 1-in. pieces

  • 1/4 cup

    fresh mint leaves, torn

  • 1/4 cup

    toasted peanuts, chopped

Directions

    1. Step 1Heat grill to medium-high. Cut green cabbage into 4 wedges, leaving core intact. Brush with 1 tablespoon oil, then place on grill flat side down and cook until charred, 3 to 4 minutes per side.
    2. Step 2Meanwhile, in bowl, whisk together lime juice, vinegar, brown sugar, pepper flakes, remaining 3 tablespoons oil, and 1/2 teaspoon salt. 
    3. Step 3Transfer green cabbage to cutting board and cut into 1-inch pieces. Add to bowl with dressing along with Napa cabbage and toss to coat; fold in mint and sprinkle with peanuts.
