Save some calories and still enjoy one of your favorite meals with this veggie-packed spinach, zucchini, and goat cheese pizza delight.

Ingredients

  • 4 flour tortillas
  • 4 cups baby spinach
  • 1 medium red pepper
  • 1 medium zucchini
  • 2 tsp. minced garlic
  • 2 tsp. olive oil
  • salt
  • black pepper
  • 3/4 cup marinara sauce
  • 4 oz. goat cheese
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 cup fresh basil leaves

Directions

    1. Step 1Arrange oven racks in top and bottom thirds of oven. Preheat oven to 475 degrees F. Spray 2 large cookie sheets with nonstick cooking spray; place 2 tortillas on each.
    2. Step 2In large bowl, toss vegetables, garlic, oil, and 1/2 teaspoon each salt and black pepper until coated. Microwave on high 2 minutes, stirring once. Drain, if necessary. Spread sauce on tortillas. Top with vegetables and cheeses.
    3. Step 3Bake 12 minutes or until tortillas are crisp around edges, switching racks halfway. Top with basil.
