Corn and Bean Burgers

Ingredients
- 1 can pink beans
- 1/2 cup breadcrumbs
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup corn kernels
- 1/2 cup sharp Cheddar cheese
- Cooking spray
- Lettuce
- tomatoes
Directions
- Step 1In food processor, pulse beans, breadcrumbs, salt, and pepper until ground.
- Step 2Add corn kernels and Cheddar cheese; pulse to just combine. Form into 4 (4-inch round) patties.
- Step 3Coat 12-inch nonstick skillet with cooking spray. Add patties; coat with spray. Cook on medium 15 minutes or until browned, turning once. Serve on buns with lettuce and tomatoes.
